Home Made Udon Noodle Soup!

This is a great soup to bring with you camping.  None of the ingredients require refrigeration before cooking.  I created the recipe for Burning Man in 2007.  I wanted to have a hearty meal without worrying about keeping my ingredients fresh!

Dried shitake mushrooms - You can use any dried mushroom that you want.

Rice Noodles -

Stock - Beef, Chicken or Veggie all work.

Soy sauce

Fish sauce

Hot chili oil

Huey Fong Sriracha Hot Chili Sauce

Salt n Pepper

Garlic Salt

Seaweed

Put all of the ingredients except for the seaweed into a large pot and bring to a boil.  Reduce to a simmer until the noodles are fully cooked.  Add water for more broth if you want to.  Take the soup off the heat and add the seaweed.  Serve HOT! 

Variations: Miso Paste, crushed red chili peppers, dried chives, dried shrimps. Canned peas
