Won ton cups with shrimp filling…
First thing that you need to get if you don’t have one already is a mini muffin pan. I have 2 actually from the Pampered Chef. I love them but I would imagine any nonstick muffin pan would work just as well.
So what I did was, brush little won ton wrappers with olive oil lightly then push them down into the muffin pan. I then baked them till they were just golden.
While they were cooking, I took the following and mixed them together.
Shrimp
Cream cheese (really soft)
Pressed garlic
Kosher salt
Pepper
Mayo (not a lot, maybe 1 part to 3 parts cream cheese)
Mozzarella
Parmesan
Chopped green onion
Tabasco (just a tiny bit)
Spinach is also good as filler if you like it.
You could also crumble something like blue cheese on the top when they are done.
Bacon bits? There are sooooo many variations!
Another filling I used was steamed cauliflower chopped up with
Sautéed mushrooms in garlic and wine; just swap them out with the shrimp.
For a low fat version try just roasting veggies and crumbling a bit of cheese on top!
Whatever filling you decide on, these apps are made to be hot. Just before serving put them into the oven at 350° for like 10 min, just enough to melt everything.
By the way, these cups are good with pie filling also, just use-clarified butter instead of olive oil. Dust with powdered sugar!
